15min Veggie Eggy Courgette Baskets

Ingredients

  • eggs
  • veggies
  • Himalayan salt
  • black pepper
  • garlic
  • chillies

Preparation

  1. Pre-heat oven 200C

  2. Slice your courgettes lengthwise

  3. Form little baskets by overlapping and overlaying the sliced courgette into muffin tray compartments

  4. Break some eggs, chop some veggies, add whatever veggies you have in the fridge and fancy or don’t add any at all

  5. Season with all these or select your preferred ones: Himalayan salt, black pepper, garlic, chillies

  6. Single cream adds an extra fluffy touch but can be left out

  7. Fill the baskets

  8. Place in oven for 10mins checking with the knife if cooked through

  9. Take in your lunch box with some salad, beans, chick peas seeds, whatever else healthy you have in the house

  10. Feel great for having made yourself a healthier alternative to sandwiches, wraps, sushi or whatever easy lunch options readily available in high street food retail shops
