Easy Green Shakshouka with Spinach and Eggs
Ingredients
- 1 cup spinach
- 1 cup coriander leaves and stems
- handful basil leaves
- 2 medium sized garlic cloves
- 1 tsp Himalayan salt
- pinch of black pepper
- 2-3 small green chillies
- 1/4 cup olive oil
- eggs
- buffalo mozzarella
Preparation
Blitz all ingredients except eggs and cheese in a Nutribullet (no chopping necessary).
Preheat oven to 220C.
Bake on cast iron sizzler plates at high heat for 7-10 minutes or until the sauce thickens and cheese starts to brown.
