Easy Green Shakshouka with Spinach and Eggs

Ingredients

  • 1 cup spinach
  • 1 cup coriander leaves and stems
  • handful basil leaves
  • 2 medium sized garlic cloves
  • 1 tsp Himalayan salt
  • pinch of black pepper
  • 2-3 small green chillies
  • 1/4 cup olive oil
  • eggs
  • buffalo mozzarella

Preparation

  1. Blitz all ingredients except eggs and cheese in a Nutribullet (no chopping necessary).

  2. Preheat oven to 220C.

  3. Bake on cast iron sizzler plates at high heat for 7-10 minutes or until the sauce thickens and cheese starts to brown.
