Easy Asparagus Egg Frittata for Brunch

Ingredients

  • 8 eggs
  • 3 tablespoons oat milk
  • 1 teaspoon salt
  • pinch of pepper
  • 1/2 onion
  • chopped garlic
  • roughly chopped spinach
  • asparagus

Preparation

  1. Use any veggies you like, such as spinach and kale, and fresh herbs like chopped parsley and thyme if available.

  2. Whisk 8 eggs with 3 tablespoons of oat milk, 1 teaspoon of salt, and a pinch of pepper.

  3. In a cast iron pan, sauté half an onion and chopped garlic, then add roughly chopped spinach and asparagus and sauté for 5 minutes.

  4. Pour the egg mixture into the pan and bake at 350 degrees Fahrenheit for 20 minutes or until the eggs are set and not jiggly.

  5. Optionally, add cheese such as a dollop of cashew ricotta cheese before or after baking; no need to design a pattern with produce unless desired.
