Easy Asparagus Egg Frittata for Brunch
Ingredients
- 8 eggs
- 3 tablespoons oat milk
- 1 teaspoon salt
- pinch of pepper
- 1/2 onion
- chopped garlic
- roughly chopped spinach
- asparagus
Preparation
Use any veggies you like, such as spinach and kale, and fresh herbs like chopped parsley and thyme if available.
Whisk 8 eggs with 3 tablespoons of oat milk, 1 teaspoon of salt, and a pinch of pepper.
In a cast iron pan, sauté half an onion and chopped garlic, then add roughly chopped spinach and asparagus and sauté for 5 minutes.
Pour the egg mixture into the pan and bake at 350 degrees Fahrenheit for 20 minutes or until the eggs are set and not jiggly.
Optionally, add cheese such as a dollop of cashew ricotta cheese before or after baking; no need to design a pattern with produce unless desired.
