Masala Spinach Omelette with Broccoli and Beetroot

Ingredients

  • 3 eggs
  • 1/2 tbsp olive oil
  • chopped red onions
  • 1/4 tspn turmeric
  • 1/4 tspn chilli powder
  • 1/4 tspn coriander-cumin powder (dhana-jeeru)
  • 1/4 tspn Himalayan salt
  • 5-6 baby spinach leaves
  • sprinkles of pumpkin seeds

Preparation

  1. Heat a little olive oil or any preferred oil in a frying pan.

  2. When the oil is hot enough, add the onions to fry them for 1 minute.

  3. Add all the spices and stir in for 1 minute.

  4. Meanwhile beat three eggs.

  5. Add the eggs to your pan.

  6. Cook for 2 minutes on each side.

  7. Add spinach leaves before you flip the omelette.
