Green Omelette with Vegetables and Herbs

Ingredients

  • 75g Spinach
  • 30g Kale
  • 2 eggs
  • 2 tbsp egg whites
  • 1 Garlic clove
  • 1 handful of fresh herbs (basil or parsley)
  • 2 tbsp Parmesan
  • Coconut Oil for frying

Optional additions

  • Smoked salmon
  • Quark
  • Tomatoes

Preparation

  1. Blitz all the ingredients except coconut oil in a blender

  2. Heat coconut oil in a frying pan over medium heat

  3. Pour the blended mixture into the pan and fry until set and golden, about 3-5 minutes per side

  4. Add optional stuffings like smoked salmon or tomatoes during cooking if desired
