Green Omelette with Vegetables and Herbs
Ingredients
- 75g Spinach
- 30g Kale
- 2 eggs
- 2 tbsp egg whites
- 1 Garlic clove
- 1 handful of fresh herbs (basil or parsley)
- 2 tbsp Parmesan
- Coconut Oil for frying
Optional additions
- Smoked salmon
- Quark
- Tomatoes
Preparation
Blitz all the ingredients except coconut oil in a blender
Heat coconut oil in a frying pan over medium heat
Pour the blended mixture into the pan and fry until set and golden, about 3-5 minutes per side
Add optional stuffings like smoked salmon or tomatoes during cooking if desired
