Easy Shakshuka with Zucchini and Eggs

Ingredients

  • a little bit of avocado oil
  • garlic
  • shallot
  • 1 zucchini
  • tomato sauce
  • eggs
  • flaky salt
  • fresh herbs
  • crusty bread

Preparation

  1. In a pan with a little bit of avocado oil, sauté garlic and shallot.

  2. Add 1 zucchini halved and cut in thin slices, and cook until done.

  3. Add tomato sauce, make little nests, and add an egg in each nest.

  4. Cover and let it cook without overcooking the eggs.

  5. Add flaky salt and fresh herbs.

  6. Serve with crusty bread and enjoy. Always use fresh herbs!
