Zoodle Egg Nest with Avocado Toast
Ingredients
- 1/2 zucchini
- a little ghee
- 1 egg
- 1 slice gluten-free bread
- 1/2 avocado
- some strawberries
Preparation
Spiralize the zucchini using a spiralizer attachment if not already done.
Sauté the zoodles in a little ghee over low medium heat for 3-4 minutes.
Form a nest shape with the sautéed zoodles.
Crack an egg into the nest.
Fry until the egg whites are done; flip if necessary to speed up cooking.
Prepare the avocado toast by spreading 1/2 avocado on a slice of gluten-free bread and adding some strawberries.
