Zoodle Egg Nest with Avocado Toast

Ingredients

  • 1/2 zucchini
  • a little ghee
  • 1 egg
  • 1 slice gluten-free bread
  • 1/2 avocado
  • some strawberries

Preparation

  1. Spiralize the zucchini using a spiralizer attachment if not already done.

  2. Sauté the zoodles in a little ghee over low medium heat for 3-4 minutes.

  3. Form a nest shape with the sautéed zoodles.

  4. Crack an egg into the nest.

  5. Fry until the egg whites are done; flip if necessary to speed up cooking.

  6. Prepare the avocado toast by spreading 1/2 avocado on a slice of gluten-free bread and adding some strawberries.
