Savory Breakfast Plate with Eggs and Veggies

Ingredients

  • 2 eggs
  • ghee
  • spinach
  • zucchini
  • 1 slice sourdough bread
  • 1/2 avocado
  • everything but the bagel seasoning
  • African smoke seasoning

Preparation

  1. Heat a skillet over low medium heat.

  2. Wait for the skillet to get hot.

  3. Add ghee to the skillet.

  4. Crack two eggs into the skillet.

  5. Cook the eggs until the whites are done.

  6. Sauté spinach and zucchini until tender.

  7. Toast one slice of sourdough bread.

  8. Spread 1/2 avocado on the toast.

  9. Season the avocado with everything but the bagel seasoning.

  10. Season the eggs with African smoke seasoning.

  11. Assemble the plate with fried eggs, sautéed veggies, and avocado toast.

  12. Use free range eggs for best results, as they have a more orange yolk indicating higher quality.
