Broccoli and Spinach Muffins

Ingredients

  • 4 eggs
  • Spray of olive oil
  • 1 cup raw baby spinach
  • 1 teaspoon Himalayan salt
  • 1/2 teaspoon pepper
  • Steamed broccoli

Preparation

  1. In a Nutribullet, add the eggs, spinach, and seasoning and blitz.

  2. Heat an egg poaching pan and spray some olive oil.

  3. Pour the egg mix into the four compartments.

  4. Add steamed broccoli or any veggie you like or none.

  5. Steam on medium flame and watch the muffins rise.
