L E F T O V E R Potatoes

Ingredients

  • onion
  • peppers, jalapeño, leftover potatoes
  • sprinkle of paprika
  • pepper
  • eggs
  • greens
  • cherry tomatoes
  • potato

Preparation

  1. Sauté 1/3 of a chopped onion & then add diced peppers, jalapeño, leftover potatoes & sprinkle of paprika & pepper, cook until crispy

  2. Add eggs to boiling water, boil for just under 6 mins, place in ice bath for 5 mins, then peel

  3. Assemble bowls with greens, sliced avocado, cherry tomatoes, potato hash & eggs

  4. Season with fresh chives & chili flakes
