L E F T O V E R Potatoes
Ingredients
- onion
- peppers, jalapeño, leftover potatoes
- sprinkle of paprika
- pepper
- eggs
- greens
- cherry tomatoes
- potato
Preparation
Sauté 1/3 of a chopped onion & then add diced peppers, jalapeño, leftover potatoes & sprinkle of paprika & pepper, cook until crispy
Add eggs to boiling water, boil for just under 6 mins, place in ice bath for 5 mins, then peel
Assemble bowls with greens, sliced avocado, cherry tomatoes, potato hash & eggs
Season with fresh chives & chili flakes
