The Chickpea Egg Omelette

Ingredients

  • 1/2 cup + 1 tbsp cup water
  • 1/2 cup chickpea flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt (use black salt for egg taste/smell
  • 1/4 of a small onion chopped up
  • 1 garlic clove
  • drizzle of evoo
  • 1 roma tomato
  • handful of kale or spinach

Preparation

  1. Whisk together egg and set aside

  2. Chop garlic onion fine then sauté with oil in non stick pan

  3. Add veggies and wilt down, move it around so it’s equally on the pan

  4. Pour the egg mixture over everything

  5. Low heat cook with lid on till the omelette can be flipped

  6. The edges will start to be crispy and the omelette is cooked thru

  7. Flip horizontal carefully trying to not break it

  8. Then wait till each side is crispy

  9. Served with a simple garden salad
