Cheesy Vegan Scrambled Tofu with Sourdough
Ingredients
- 1 tub firm tofu
- Kale
- Red pepper
- Onion
- Carrot
- Garlic chives
Cheesy sauce
- 1 tablespoon mellow miso
- 1 tablespoon nutritional yeast
- 1/4 teaspoon garlic powder
- 1/4 cup water
- 1/4 cup sourdough discard
Preparation
Mix the sauce ingredients together in a small bowl.
Drain the water from a tub of firm tofu.
Break the tofu into large pieces and place in a dry non-stick pan.
Heat on high and cook without stirring for 5 minutes.
Add 1/4 cup water to loosen the tofu from the pan.
Add vegetables such as kale, red pepper, onion, carrot, and garlic chives.
Cover and cook until vegetables are softened, if using.
Season with the sauce right before serving.
