Vegan Tofu Chickpea Omelette with Vegetables
Ingredients
- 1 block silken tofu (soft)
- 1/2 cup chickpea flour
- 1/4 cup water
- 3 tablespoons nutritional yeast
- 1/2 teaspoon black salt
- 1/2 teaspoon turmeric powder
- 1 teaspoon baking powder
Filling
- onion
- red pepper
- kale
Preparation
Sauté your veggies, such as onion, red pepper, and kale, and set aside.
Add all the omelette ingredients to a food processor or blender and blend until smooth.
Heat a pan with cooking spray and pour in some of the omelette mixture, spreading it like a pancake.
Add the sautéed vegetables on top, optionally include vegan cheese, cover, and cook for 5 minutes.
Flip the omelette, cover, and cook for another 5-8 minutes until the edges are golden brown and fully cooked.
Tips
Use silken tofu for the best consistency; regular tofu may not work well.
Customize with different vegetables or add vegan cheese for extra flavor.
