Vegan Tofu Chickpea Omelette with Vegetables

Ingredients

  • 1 block silken tofu (soft)
  • 1/2 cup chickpea flour
  • 1/4 cup water
  • 3 tablespoons nutritional yeast
  • 1/2 teaspoon black salt
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon baking powder

Filling

  • onion
  • red pepper
  • kale

Preparation

  1. Sauté your veggies, such as onion, red pepper, and kale, and set aside.

  2. Add all the omelette ingredients to a food processor or blender and blend until smooth.

  3. Heat a pan with cooking spray and pour in some of the omelette mixture, spreading it like a pancake.

  4. Add the sautéed vegetables on top, optionally include vegan cheese, cover, and cook for 5 minutes.

  5. Flip the omelette, cover, and cook for another 5-8 minutes until the edges are golden brown and fully cooked.

Tips

  1. Use silken tofu for the best consistency; regular tofu may not work well.

  2. Customize with different vegetables or add vegan cheese for extra flavor.
