5-Ingredient Vegan Chickpea Flour Omelette
Ingredients
- 3 tablespoons chickpea flour
- 1/4 cup water
- 1/8 teaspoon black lava salt
- 1 tablespoon nutritional yeast (optional)
- 1/2 teaspoon seasonings of choice (optional)
Fillings
- 1 cup steamed spinach
- 1 tablespoon almond milk ricotta
Garnish
- Avocado (for rose)
Preparation
Whisk together chickpea flour, water, nutritional yeast, and seasonings.
Heat a non-stick skillet over medium low heat and spray lightly with water or oil. Pour chickpea mixture into skillet and give it a swirl to coat. Cover with lid.
Meanwhile, steam your spinach and make your avocado rose.
Check on your omelette after 3-4 minutes, and once it’s no longer wet on top, fold it in half, optionally filling with spinach and ricotta before folding.
Serve hot with avocado rose and hot sauce of choice.
