Vegan Chickpea Flour Omelette
Ingredients
- 1/2 cup chickpea flour
- 2/3 cup water
- 2 tablespoons nutritional yeast
- 3/4 teaspoon Himalayan black salt
- 1/4 teaspoon black pepper
- 1/4 yellow onion, chopped
- 4 ounces mini peppers, sliced
Preparation
Saute the peppers and onions in a pan until softened.
In the meantime, mix the chickpea flour with water and seasonings, as well as the cooked veggies.
Pour the omelette mixture back onto the hot pan and crack some black pepper on top.
Cook until the top side does not look wet anymore, then carefully pick the edges with a spatula and turn the omelette over.
Cook for 2-3 more minutes on the other side and serve immediately.
