Vegan Scrambled Chickpea Egg on Toast

Ingredients

  • 80g chickpea flour
  • 1/8 tsp kala namak (black salt)
  • a pinch of turmeric
  • 1/4 tsp black pepper
  • 1 tsp extra virgin olive oil
  • 180ml water
  • extra oil for frying

Preparation

  1. In a bowl, mix chickpea flour, kala namak, turmeric, black pepper, and water to form a smooth batter

  2. Heat oil in a frying pan over medium heat

  3. Pour the batter into the pan and cook, stirring frequently to scramble until set and lightly browned

  4. Serve the scrambled mixture on toasted bread with kimchi
