Vegan Chickpea Flour Omelette
Ingredients
- 1/4 cup chickpea flour
- 1/8 teaspoon baking powder
- 1 tablespoon nutritional yeast
- 1/4 teaspoon black lava salt (or regular salt)
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/8 teaspoon turmeric
- 1/2 cup water
- 1 cup mixed vegetables of choice (e.g., red pepper, mushrooms, spinach)
- Vegan ricotta or cheese of choice
Preparation
Combine flour and seasonings in a bowl, stir to combine, and mix in water. Set aside.
Heat 1 teaspoon of extra virgin olive oil in an 8-inch cast iron skillet over medium-high heat. Sauté vegetables until tender. Remove and wipe out the skillet.
Add another teaspoon of extra virgin olive oil and reduce heat to low. Fluff the chickpea mixture with a fork and pour into the skillet. Cover and cook for 2 minutes until the top side is no longer wet.
Top with vegetables and cheese. Fold in half. Serve with fresh greens and avocado.
Tips
Black lava salt provides an eggy flavor but can be substituted with regular salt.
Turmeric is used primarily for color.
