Scrambled Tofu with Spinach on Toast

Ingredients

  • 150g firm silken tofu (drained)
  • 1/2 a small onion (chopped)
  • 1 garlic clove (minced)
  • 1/2 tsp turmeric
  • 1/4 tsp black salt (kala namak)
  • 2 tbsp nutritional yeast
  • Black pepper (to season)
  • 60ml soya or oat cream
  • Handful of spinach
  • 1 tbsp olive oil

Preparation

  1. In a medium to large frying pan heat the oil on a medium heat.

  2. Add the onion and garlic and stir until slightly softened (4-5 minutes).

  3. Crumble the tofu in the pan (use a wooden spoon) add the turmeric, salt, pepper and nutritional yeast.

  4. Stir thoroughly coating the tofu until golden.

  5. Pour in the cream and add the spinach continue to heat and stir for another 2-3 minutes.

  6. Serve hot from the pan with toast.

Notes

  1. Use sea or pink salt if black salt is not available.

  2. Black pepper is used liberally to season.
