Easy Vegan Tofu Scramble Breakfast

Ingredients

  • 1 tsp EVOO
  • 4 oz extra firm tofu
  • 1-2 TBSP water or plant milk
  • onion powder, garlic powder, paprika, and pepper to taste
  • 1 TBSP nutritional yeast
  • 1/4 tsp black lava salt
  • 1/4 tsp turmeric
  • sautéed vegetables (optional)

Accompaniments

  • Steamed spinach
  • Halved cherry tomatoes
  • Avocado
  • EBTB seasoning
  • Hot sauce
  • Microgreens

Preparation

  1. Heat EVOO in a skillet over medium heat. Sauté veggies if adding.

  2. Add in tofu and mash with a spoon. Add seasonings and milk or water and scramble to heat through.

Notes

  1. This vegan tofu scramble provides similar calories and protein to eggs but with less sodium and cholesterol, and more iron, potassium, and calcium.

  2. Ideal for brunch; add to your menu for a plant-based option.
