Vegan Kenosha Garbage Plate
Ingredients
- Vegan sausage (such as No Evil Foods The Stallion)
- Shredded potato
- Firm tofu (1 block)
- Small onion, diced
- Garlic (2 cloves, minced)
- Red pepper (1/2 cup, diced)
- Water (1/2 cup)
- White miso (1 tablespoon)
- Nutritional yeast (2 tablespoons)
- Turmeric (1/4 teaspoon)
- Smoked paprika (1/2 teaspoon)
- Corn starch (1 tablespoon)
- Oil (for cooking)
- Field Roast Chao cheese shreds (1/2 cup)
- Fresh sourdough bread (for side)
Preparation
Chop up some vegan sausage and cook it in a pan with a little oil
Add in a shredded potato and cook until it is browned and crispy, about 5-7 minutes, then transfer to a bowl or dish
Crumble a block of firm tofu into the pan and cook until it starts to brown and the moisture is gone
Add in a small diced onion, 2 cloves minced garlic, and 1/2 cup diced red pepper, then stir and cook for 3 minutes
In a measuring cup, mix 1/2 cup water, 1 tablespoon white miso, 2 tablespoons nutritional yeast, 1/4 teaspoon turmeric, 1/2 teaspoon smoked paprika, and 1 tablespoon corn starch
Pour the mixture over the tofu and stir while heating
Push the tofu to one side of the pan, pour half the cooked shredded potato and sausage into the other half and spread to cover, then scoop the tofu on top
Sprinkle on 1/2 cup Field Roast shredded Chao cheese and add the rest of the potato on top
Cook for 3 minutes, then messily flip and cook again for 3 minutes
Divide in half and serve

This is a vegan version of the Kenosha garbage plate, originally featuring eggs and other non-vegan elements
