5 a Day Vegetable Egg Scramble
Ingredients
- Asparagus
- Tomatoes
- Red onion
- Green beans
- Broccoli
- Olive oil
- Salt
- Pepper
- Eggs
- Bread for toast
Optional
- 1/2 avocado
Preparation
Sauté the vegetables in a pan with a little olive oil, salt, and pepper.
Crack in a few eggs and scramble.
Serve on a slice of toast.
