5 a Day Vegetable Egg Scramble

Ingredients

  • Asparagus
  • Tomatoes
  • Red onion
  • Green beans
  • Broccoli
  • Olive oil
  • Salt
  • Pepper
  • Eggs
  • Bread for toast

Optional

  • 1/2 avocado

Preparation

  1. Sauté the vegetables in a pan with a little olive oil, salt, and pepper.

  2. Crack in a few eggs and scramble.

  3. Serve on a slice of toast.
