Roasted Sweet Potato and Veggie Lunch Bowl
Ingredients
- Sweet potato
- Olive oil
- Salt
- Pepper
- Broccoli
- Kale
- Coconut oil
- Avocado
- Hummus
- Sesame seeds
Preparation
Slice the sweet potato and roast it with olive oil, salt, and pepper for 45 minutes at 160 degrees.
Wok fry the broccoli and kale in coconut oil.
Serve with avocado, hummus, and sesame seeds.
