15min Veggie Eggy Courgette Baskets
Ingredients
- Courgettes
- Eggs
- Assorted vegetables
- Himalayan salt
- Black pepper
- Garlic
- Chillies
- Single cream (optional)
Preparation
Pre-heat oven to 200C
Slice courgettes lengthwise
Form little baskets by overlapping and overlaying the sliced courgette into muffin tray compartments
Break eggs and chop vegetables, add desired veggies or omit them
Season with Himalayan salt, black pepper, garlic, and chillies or choose preferred seasonings
Optionally add single cream for extra fluffiness
Fill the courgette baskets with the mixture
Place in oven for 10 minutes and check with a knife if cooked through
Remove from oven and pack in a lunch box with salad, beans, chickpeas, seeds, or other healthy items
Enjoy as a healthier alternative to common lunch options like sandwiches or wraps
