Omelette Waffles with Spinach Salad

Ingredients

  • 2 cage free organic eggs
  • dash of almond milk
  • chopped onion
  • mushrooms
  • organic baby spinach
  • 1/4 cup tahini
  • 1/2 cup fresh squeezed lemon juice
  • 1 large clove garlic
  • salt
  • black pepper

Preparation

  1. Blend tahini, lemon juice, garlic, salt, and pepper in a food processor.

  2. Mix eggs, almond milk, chopped onion, and mushrooms in a bowl

  3. Cook the mixture in a waffle iron until golden and set

  4. Toss baby spinach with the prepared dressing.

  5. Serve the omelette waffles alongside the spinach salad
