Omelette Waffles with Spinach Salad
Ingredients
- 2 cage free organic eggs
- dash of almond milk
- chopped onion
- mushrooms
- organic baby spinach
- 1/4 cup tahini
- 1/2 cup fresh squeezed lemon juice
- 1 large clove garlic
- salt
- black pepper
Preparation
Blend tahini, lemon juice, garlic, salt, and pepper in a food processor.
Mix eggs, almond milk, chopped onion, and mushrooms in a bowl
Cook the mixture in a waffle iron until golden and set
Toss baby spinach with the prepared dressing.
Serve the omelette waffles alongside the spinach salad
