Simple Spinach Poached Eggs

Ingredients

  • 1 handful of organic spinach
  • 4 eggs
  • Mozzarella balls
  • Himalayan salt, black pepper and chilli flakes to taste

Preparation

  1. Blitz the eggs and spinach in a NutriBullet, excluding the mozzarella balls and chilli flakes.

  2. Coat an egg poaching pan with some oil, such as coconut oil.

  3. Pour the spinach egg mixture into the compartments.

  4. Steam for 5-7 minutes.

  5. Place the mozzarella balls on top and sprinkle chilli flakes if desired.

  6. Serve hot and store in the fridge for up to 2 days as a snack.
