Simple Spinach Poached Eggs
Ingredients
- 1 handful of organic spinach
- 4 eggs
- Mozzarella balls
- Himalayan salt, black pepper and chilli flakes to taste
Preparation
Blitz the eggs and spinach in a NutriBullet, excluding the mozzarella balls and chilli flakes.
Coat an egg poaching pan with some oil, such as coconut oil.
Pour the spinach egg mixture into the compartments.
Steam for 5-7 minutes.
Place the mozzarella balls on top and sprinkle chilli flakes if desired.
Serve hot and store in the fridge for up to 2 days as a snack.
