Spicy Lentil Soup

Ingredients

  • 1-2 Tbsp oil
  • 2 onions, chopped
  • 2 cloves garlic, chopped
  • 4 tsp ground cumin
  • 2 tsp ground ginger
  • 4 tsp ground coriander
  • 2 cups dried red lentils
  • 8-10 cups water or stock*
  • 400g tinned tomatoes
  • 4 lemon slices *use water or make your own veggie stock for babies under 1 year of age

Preparation

  1. Soften the onions in a frying pan over a medium heat in the oil

  2. Add the garlic and spices to the onion

  3. Add the dry lentils and coat in the spices

  4. Add the water or stock, lemon slices and tinned tomatoes

  5. Simmer for around 30 minutes

  6. Blend until smooth

  7. Serve with toast fingers, toasted cheese or cheese scones
