Summer Zoodle Glow Bowl

Ingredients

  • 2 zucchinis
  • 1 cup shelled edamame

Optional add-ins

  • Bell peppers
  • Carrots
  • Purple cabbage

Creamy avocado lime sauce

  • 1 ripe avocado
  • 1/2 cup spinach
  • 1/4 cup fresh cilantro
  • 2-3 slices of jalapeño
  • Juice of 1 lime
  • 1/2 cup water
  • 1 teaspoon maple syrup
  • 1/2 teaspoon tamari
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper

Preparation

  1. Spiralize the zucchini and cook the edamame according to the package’s directions. Combine them in a large bowl and mix well.

  2. In a food processor, blend all the ingredients for the Creamy Avocado Lime Sauce until smooth and creamy.

  3. Transfer the sauce into the large bowl and toss with the zoodles.

  4. Enjoy!
