Summer Zoodle Glow Bowl
Ingredients
- 2 zucchinis
- 1 cup shelled edamame
Optional add-ins
- Bell peppers
- Carrots
- Purple cabbage
Creamy avocado lime sauce
- 1 ripe avocado
- 1/2 cup spinach
- 1/4 cup fresh cilantro
- 2-3 slices of jalapeño
- Juice of 1 lime
- 1/2 cup water
- 1 teaspoon maple syrup
- 1/2 teaspoon tamari
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
Preparation
Spiralize the zucchini and cook the edamame according to the package’s directions. Combine them in a large bowl and mix well.
In a food processor, blend all the ingredients for the Creamy Avocado Lime Sauce until smooth and creamy.
Transfer the sauce into the large bowl and toss with the zoodles.
