Summer Superfood Salad

Ingredients

  • spinach
  • cucumber (sliced)
  • red cabbage (finely sliced)
  • avocado (sliced)
  • green olives (pitted)
  • earth seeds
  • sunflower seeds
  • chili & spirulina hummus (optional)
  • crunchy edamame (h&b)
  • tahini
  • original pili nuts
  • w/ olive oil & lemon (mixed together)
  • spinach

  • sunflower seeds
  • chili & spirulina hummus (optional)
  • crunchy edamame beans
  • tahini
  • original pili nuts
  • w/ olive oil & lemon (mixed together)

Preparation

  1. Add spinach, cucumber, red cabbage, avocado, olives & edamame beans into a bowl

  2. Sprinkle earth and sunflower seeds

  3. Mix olive oil & lemon to dress the salad

  4. You can additionally top it with with tahini and spirulina hummus

  5. Served with miso seedy crackers

  6. Preparation time: 30 minutes

  7. Add spinach, cucumber, red cabbage, avocado, olive & edamame beans into a bowl

  8. Sprinkle earth and sunflower seeds

  9. Mix olive oil & lemon to dress the salad

  10. You can additionally top it with with tahini and spirulina hummus

  11. Top with pili nuts on each avocado slice (as shown on the image)

  12. Served with miso seedy crackers
