Summer Superfood Salad
Ingredients
- spinach
- cucumber (sliced)
- red cabbage (finely sliced)
- avocado (sliced)
- green olives (pitted)
- earth seeds
- sunflower seeds
- chili & spirulina hummus (optional)
- crunchy edamame (h&b)
- tahini
- original pili nuts
- w/ olive oil & lemon (mixed together)

Preparation
Add spinach, cucumber, red cabbage, avocado, olives & edamame beans into a bowl
Sprinkle earth and sunflower seeds
Mix olive oil & lemon to dress the salad
You can additionally top it with with tahini and spirulina hummus
Served with miso seedy crackers
Preparation time: 30 minutes
