Earth Bowl with Savory Mushrooms
Ingredients
For the mushrooms
- 1 tbs of maple syrup
- 1 tbs of soy sauce
- 1/2 tsp of paprika
- 1/2 tsp of cumin
- 1/8 tsp of black pepper
- sprinkle of cayenne pepper
- 2 cups of sliced baby bella mushrooms
For the earth bowl
- spring mix
- baby spinach
- zoodles
- cucumber rolls
- avocado rose
- lime
Preparation
In a small bowl combine maple, soy sauce, paprika, cumin, pepper, and cayenne. Stir well with a fork and add mushrooms. Stir until all components are well combined and allow to sit for 5 minutes stirring occasionally.
Heat a medium sized pan on medium heat and add mushrooms. Cook mushrooms for 5 minutes or until mushrooms are cooked through. Once mushrooms are ready, remove from heat and set aside.
On dishware of choice, add spring mix and spinach. Top the bed of greens with sections of zoodles, cucumber rolls, avocado rose, and mushrooms. Top off with fresh squeezed lime and garnish with hemp seeds.
