Thyme Infused Balsamic Lentils

Ingredients

  • 1/2 cup dry lentils
  • 2 cups water
  • 1/3 cup crushed tomatoes
  • 1 tbsp tahini
  • 2 tbsp white balsamic vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp thyme
  • Salt to taste

Preparation

  1. Add lentils and water to a pan and bring up to a boil.

  2. Reduce lentils to a simmer and allow to cook for about 15 minutes or until a majority of the water cooks off.

  3. Add tomatoes, thyme, garlic and 1 tablespoon balsamic to the lentils and stir together.

  4. Allow to cook until fragrant, about 2-3 minutes.

  5. Add in tahini and extra tablespoon of balsamic.

  6. Stir to combine and cook for about 5 minutes on low and remove from heat once thickened.

  7. Serve and enjoy.
