Thyme Infused Balsamic Lentils
Ingredients
- 1/2 cup dry lentils
- 2 cups water
- 1/3 cup crushed tomatoes
- 1 tbsp tahini
- 2 tbsp white balsamic vinegar
- 1/2 tsp garlic powder
- 1/2 tsp thyme
- Salt to taste
Preparation
Add lentils and water to a pan and bring up to a boil.
Reduce lentils to a simmer and allow to cook for about 15 minutes or until a majority of the water cooks off.
Add tomatoes, thyme, garlic and 1 tablespoon balsamic to the lentils and stir together.
Allow to cook until fragrant, about 2-3 minutes.
Add in tahini and extra tablespoon of balsamic.
Stir to combine and cook for about 5 minutes on low and remove from heat once thickened.
Serve and enjoy.
