Vegan Spicy Chickpea Tuna Salad Wraps

Ingredients

Spicy chickpea tuna spread

  • 1 1/3 cup chickpeas
  • 1/3 cup tofu ranch dressing or vegan mayo
  • 1/2 tsp salt
  • 1 tbsp fresh dill, chopped
  • 2 tsp paprika powder
  • 1/2 tbsp Dijon mustard or regular mustard
  • 1 tbsp maple syrup or sweetener of choice

For assembly

  • Tortilla wraps or bread
  • Assorted veggies (such as greens, tomatoes, sprouts, pickled radish), to taste
  • Smokey bacon sauce, optional

Preparation

  1. Mash the chickpeas using a fork or in a food processor until slightly chunky

  2. Add the remaining spread ingredients and mix well in a bowl. Adjust seasoning to taste

Assembly

  1. Spread the chickpea mixture onto tortilla wraps or bread

  2. Top with assorted veggies and smokey bacon sauce

  3. Roll up the wraps and serve
