Chickpea Salad Sandwich

Ingredients

  • 2 cans chickpeas, rinsed and drained
  • 1/3 cup original flavored hummus
  • 1 tbsp mustard (I really love horseradish mustard in this)
  • 2 tbsp pickled relish
  • 1/4 red onion, minced
  • 1/4 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Juice of half a lemon
  • Lemon zest

Preparation

  1. In a Tupperware container, add chickpeas and mash chickpeas using a fork or potato masher until about 1/2 of your mixture is mashed (should still have some chickpea chunks there)

  2. Add remaining ingredients and stir to combine

  3. Add salt and pepper to taste (I used about 1/8 tsp each)

  4. To assemble sandwich here, take two pieces whole grain bread and layer one slice with greens, 1/3 to 1/2 cup chickpea salad, roasted bell pepper, and sliced or mashed avocado

  5. Top with second bread slice and enjoy
