Spiced Chickpea Avocado Toast

Ingredients

  • 1 large avocado
  • Lime, salt, and pepper (for mashing)
  • 1 can chickpeas, rinsed and drained
  • 1/2 teaspoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon mild chili powder
  • Pinch of turmeric
  • Bread slices

Preparation

  1. Preheat oven to 180°C/360°F.

  2. Toss chickpeas with olive oil and roast for 20 minutes until crunchy.

  3. Remove chickpeas from oven, add spices, shake well, and return to oven for a few more minutes to absorb flavor.

  4. Mash avocado with lime juice, salt, and pepper.

  5. Toast bread slices.

  6. Spread mashed avocado on toast, top with spiced chickpeas, and serve with a squeeze of lime.
