Spiced Chickpea Avocado Toast
Ingredients
- 1 large avocado
- Lime, salt, and pepper (for mashing)
- 1 can chickpeas, rinsed and drained
- 1/2 teaspoon olive oil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon mild chili powder
- Pinch of turmeric
- Bread slices
Preparation
Preheat oven to 180°C/360°F.
Toss chickpeas with olive oil and roast for 20 minutes until crunchy.
Remove chickpeas from oven, add spices, shake well, and return to oven for a few more minutes to absorb flavor.
Mash avocado with lime juice, salt, and pepper.
Toast bread slices.
Spread mashed avocado on toast, top with spiced chickpeas, and serve with a squeeze of lime.
