Chocolate Cookies Soaked in Syrup

Ingredients

Dough

  • 1/2 cup butter, soft
  • 1/2 cup oil
  • 1 cup sugar
  • 1 large egg
  • 3 tablespoons cocoa powder
  • 2 1/2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract

Soaking syrup

  • 1 cup milk
  • 1/2 cup sugar
  • 1 tablespoon instant coffee

Decoration

  • melted white chocolate
  • toasted almond slices

Preparation

  1. Heat the oven to 170 degrees and prepare a shallow baking sheet with parchment paper.

  2. For the dough: Sift the flour, baking powder, salt, and cocoa; set aside.

  3. In the mixer bowl, place the butter, oil, and sugar, and beat until smooth.

  4. Add the egg and vanilla, and beat.

  5. Attach the paddle attachment.

  6. Add the flour mixture and mix until you get a smooth dough.

  7. Shape the dough into walnut-sized balls and place them spaced out on the sheets.

  8. Bake for 8-10 minutes until the cookies set.

  9. In a deep plate, place the soaking mixture; dip a few hot cookies in it, wait a few minutes for them to absorb, then transfer to a rack and let cool completely.

  10. Drizzle white chocolate over the cookies and garnish with almonds.

  11. For the soaking mixture: In a saucepan, place milk, sugar, and coffee, bring to a gentle boil to dissolve sugar, do not overcook. Let it cool completely; do not refrigerate.
