Fresh Pearl Couscous Chicken Salad

Ingredients

  • 55 grams of pearl couscous (50-60 grams depending on appetite)
  • 40 grams of cucumber
  • 40 grams of bell pepper or sweet pointed pepper
  • 80 grams of lettuce
  • 30 grams of cherry tomatoes
  • 10 grams of arugula
  • 100 grams of smoked chicken
  • 15 grams of mustard-dill salad dressing
  • 1/2 a canned peach (canned in pineapple juice, not syrup)

Preparation

  1. Cook pearl couscous according to package instructions until tender

  2. Chop cucumber, bell pepper, lettuce, cherry tomatoes, and arugula into bite-sized pieces

  3. If necessary, slice or shred the smoked chicken

  4. Drain and slice the canned peach

  5. In a large bowl, combine the cooked couscous, chopped vegetables, arugula, smoked chicken, and sliced peach

  6. Drizzle with mustard-dill salad dressing and toss gently to mix all ingredients
