Fresh Pearl Couscous Chicken Salad
Ingredients
- 55 grams of pearl couscous (50-60 grams depending on appetite)
- 40 grams of cucumber
- 40 grams of bell pepper or sweet pointed pepper
- 80 grams of lettuce
- 30 grams of cherry tomatoes
- 10 grams of arugula
- 100 grams of smoked chicken
- 15 grams of mustard-dill salad dressing
- 1/2 a canned peach (canned in pineapple juice, not syrup)
Preparation
Cook pearl couscous according to package instructions until tender
Chop cucumber, bell pepper, lettuce, cherry tomatoes, and arugula into bite-sized pieces
If necessary, slice or shred the smoked chicken
Drain and slice the canned peach
In a large bowl, combine the cooked couscous, chopped vegetables, arugula, smoked chicken, and sliced peach
Drizzle with mustard-dill salad dressing and toss gently to mix all ingredients
