Homemade Brown Sugar Cinnamon Pop Tarts

Ingredients

Crust

  • 2 1/2 cups all-purpose flour
  • 4 tsp sugar
  • 2 tsp kosher salt
  • 1 cup unsalted butter, chilled and cubed
  • 1/2 cup cold water

Filling

  • 3/4 cup brown sugar
  • 2 1/2 tsp cinnamon
  • 1 1/2 tbsp all purpose flour
  • 1 tsp vanilla extract
  • 1 1/2 tbsp melted butter
  • 1 egg yolk, beaten

Glaze

  • 4 tbsp butter
  • 1/2 cup brown sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract
  • 2/3 cup powdered sugar
  • 1/2 tsp cinnamon

Preparation

  1. In a food processor, pulse together flour, salt, sugar, and butter a few times

  2. Stream in the water and pulse a few more times

  3. Move the dough to a lightly floured surface and gently knead into a ball

  4. Divide dough in half, wrap in plastic wrap and chill in fridge for 1-2 hours

  5. Mix together the brown sugar, cinnamon, flour, vanilla and melted butter until well combined and set aside

  6. Preheat oven to 300˚F and line a sheet pan with parchment paper

  7. On a floured surface, roll each half of the dough into a ~14 x 14” square until the dough is ~1/8” thick

  8. Cut the dough into ~3.5 x 4.75” rectangles

  9. Spoon 1 tbsp of filling onto half of the dough rectangles, then spread into a thin layer, leaving about 1/3 ” around the border

  10. Brush egg yolk around the border of the filling

  11. Dock the tops of your pop tarts with a fork, then place over the bottom, and press down and then crimp the edges with a fork

  12. Bake for 25-30 minutes

  13. They should be very lightly browned when you take them out, and the bottoms browned slightly

  14. Let cool slightly before topping with glaze

  15. To make the glaze, add the butter, brown sugar and milk to a small saucepan over medium heat

  16. Simmer for 1-2 minutes, whisking until the brown sugar is dissolved

  17. Remove from heat and immediately whisk in the vanilla, powdered sugar and cinnamon

  18. Immediately spread the glaze onto the pop tarts

Tips

  1. The glaze will harden up quickly
