Knækbrød (Seed Cracker)

Ingredients

  • 1 cup old fashioned oats
  • 3/4 cup whole wheat flour
  • 1/4 cup chia seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 2 tbl poppy seeds
  • 1 sheet crushed nori
  • 2 tsp fennel seeds
  • 1 tsp cumin seeds
  • 3/4 tsp kosher salt
  • 1/4 cup extra virgin olive oil
  • 3/4 cup water ?

Preparation

  1. Preheat oven to 350F

  2. Crush the nori sheet in a bowl using your hands or a heavy spoon

  3. Using a mortar and pestle crush the fennel/cumin to open up the seeds but not grind them

  4. Mix all ingredients together in a bowl

  5. Place 1/2 dough on a parchment sheet

  6. Place other parchment sheet on top

  7. Roll thin (1/8

  8. Remove top parchment

  9. Repeat process with the other half

  10. Place rolled doughs with the bottom layer of parchment onto two baking sheets

  11. Lightly score each into 16-24 squares

  12. Bake for 15 min

  13. Rotate the baking sheets in your oven

  14. Bake 15 min

  15. Rotate again and bake a final 15 min

  16. Let cool and then break apart
