Knækbrød (Seed Cracker)
Ingredients
- 1 cup old fashioned oats
- 3/4 cup whole wheat flour
- 1/4 cup chia seeds
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 2 tbl poppy seeds
- 1 sheet crushed nori
- 2 tsp fennel seeds
- 1 tsp cumin seeds
- 3/4 tsp kosher salt
- 1/4 cup extra virgin olive oil
- 3/4 cup water ?
Preparation
Preheat oven to 350F
Crush the nori sheet in a bowl using your hands or a heavy spoon
Using a mortar and pestle crush the fennel/cumin to open up the seeds but not grind them
Mix all ingredients together in a bowl
Place 1/2 dough on a parchment sheet
Place other parchment sheet on top
Roll thin (1/8
Remove top parchment
Repeat process with the other half
Place rolled doughs with the bottom layer of parchment onto two baking sheets
Lightly score each into 16-24 squares
Bake for 15 min
Rotate the baking sheets in your oven
Bake 15 min
Rotate again and bake a final 15 min
Let cool and then break apart
