Quick and Easy Veggie Chocolate Truffles
Ingredients
- 100g dark chocolate
- Pinch of salt
- 1 medium ripe avocado or 1 medium baked sweet potato (flesh only)
- Matcha powder or cacao powder or chopped nuts for coating
- Optional: honey or maple syrup
Preparation
Melt the chocolate over a pan of boiling water or in the microwave.
Peel and mash the avocado or sweet potato.
Mix well into the melted chocolate and add a pinch of salt.
Chill for about 30-60 minutes.
If the mixture isn’t sweet enough, add a little honey or maple syrup before rolling.
Once set, scoop small spoonfuls and roll into balls.
Roll the balls in topping of choice such as matcha, cacao, chopped nuts, or seeds.
