Chocolate Truffles with Avocado or Sweet Potato

Ingredients

  • 100g dark chocolate
  • Pinch of salt
  • 1 medium ripe avocado
  • 1 medium baked sweet potato
  • Matcha powder or cacao powder or chopped nuts for coating

Preparation

  1. Melt the chocolate either over a pan of boiling water or in the microwave.

  2. Peel and mash the avocado or sweet potato.

  3. Mix well into the melted chocolate and add a pinch of salt.

  4. Chill for about 30-60 minutes.

  5. Once set, scoop small spoonfuls and roll into balls.

  6. Roll the balls in the topping of choice - matcha, cacao, or nuts.

  7. Enjoy!
