Sweet Potato Thai Peanut Hummus

Ingredients

  • 2 cups cooked chickpeas
  • 1 cup roasted sweet potato
  • 1/3 cup peanut butter
  • 1 tbsp red thai curry paste
  • Juice of 1 lime
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Chopped cilantro for garnish

Preparation

  1. Add all ingredients to a food processor or high speed blender and blend until well combined. Stop a couple times to scrape down the sides. If needed, add water a tablespoon at a time to smooth texture.

  2. Add to a serving bowl, sprinkle with cilantro and serve with your favourite veggies and chips. Keeps well in the fridge for up to a week.
