Sweet Potato Thai Peanut Hummus
Ingredients
- 2 cups cooked chickpeas
- 1 cup roasted sweet potato
- 1/3 cup peanut butter
- 1 tbsp red thai curry paste
- Juice of 1 lime
- 1 tsp salt
- 1/2 tsp black pepper
- Chopped cilantro for garnish
Preparation
Add all ingredients to a food processor or high speed blender and blend until well combined. Stop a couple times to scrape down the sides. If needed, add water a tablespoon at a time to smooth texture.
Add to a serving bowl, sprinkle with cilantro and serve with your favourite veggies and chips. Keeps well in the fridge for up to a week.
