Grilled Kofta with Butter

Ingredients

  • 2 large chopped onions
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon sumac
  • 1 kg very finely ground meat
  • 1 bunch finely chopped cilantro
  • 1 tablespoon pine nuts
  • 3 tablespoons melted butter

For serving

  • Arab bread
  • Parsley salad

Preparation

  1. Heat the oven grill.

  2. In a deep bowl, place the onion, salt, pepper, and sumac. Rub the onion with your fingertips well to release its water. Add the meat and cilantro. Rub the meat well with the onion and cilantro to get a smooth kofta. Add the pine nuts.

  3. Bring a tray with a metal rack and wooden skewers.

  4. Shape the kofta into fingers on the skewers and place them on the rack. Using a brush, spread the butter on the kofta.

  5. Place the kofta under the grill about 10 cm away and grill for 5 minutes. Remove from the oven and flip to the other side using kitchen tongs.

  6. Brush the kofta with the juice formed during grilling.

  7. Return the kofta under the grill for 5 minutes or until fully cooked.

  8. Serve the kofta with Arab bread and salad.
