Broiled Arabic Kofta Skewers
Ingredients
- 2 large chopped onions
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon sumac
- 1 kg very finely ground meat
- 1 bunch finely chopped coriander
- 1 tablespoon pine nuts
- 3 tablespoons melted butter

- Arabic bread
- parsley salad
Preparation
Heat the oven broiler.
In a deep bowl, place the onion, salt, pepper, and sumac. Rub the onion with your fingers to release its water. Add the meat and coriander. Rub the meat well with the onion and coriander to make a smooth kofta mixture. Add the pine nuts.
Prepare a baking sheet with a metal rack. Get wooden skewers.
Shape the kofta into fingers on skewers. Place on the rack. Brush with butter.
Place under the broiler about 10 cm away. Broil for 5 minutes. Remove the kofta from the oven. Flip the kofta to the other side using kitchen tongs.
Brush the kofta with the juices accumulated during broiling.
Return the kofta under the broiler for 5 minutes or until fully cooked.
Serve the kofta with Arabic bread and salad.
