Vegan Halloween Cookie Mouths
Ingredients
Cookies
- 250g vegan butter block
- 300g caster sugar
- 400g self raising flour
- 2 tsp vanilla extract
- 1/2 tsp salt
Buttercream
- 75g vegan butter block
- 250g icing sugar
- 1 tbsp soya milk
- Red food colouring
Additional components
- Marshmallows
- Optional sprinkles
Preparation
Cookie
Soften the butter until very soft or almost melted, for example by microwaving for 30 seconds.
Mix in the sugar, salt and vanilla.
Mix in the flour well.
Form into balls, dip in sprinkles and place on a lined baking tray. Flatten slightly with your hand.
Bake at 180°C for 10 minutes.
Remove from oven but leave on trays for 5 minutes before transferring to wire racks to cool fully.
Buttercream
Mix the butter into the icing sugar until smooth.
Add the milk and beat well.
Add red food colouring until you have a deep red colour.
Assembly
Spread buttercream on the undersides of two cookies, adding slightly more icing to the side where the teeth will go.
Press the marshmallows into the icing on one cookie and then place the other cookie on top.
Repeat for the rest of the cookies.
Tips
Use mini marshmallows or cut larger ones into pieces with kitchen scissors.
