Four-Ingredient Vegan Rainbow Cookies
Ingredients
- 350g plain flour
- 300g vegan butter block
- 100g caster sugar
- 2 tsp vanilla extract
Preparation
Place the flour, sugar, and vanilla extract in a food processor.
Cut the vegan butter into small pieces and add them to the processor.
Process until the mixture begins to clump together, but do not overmix.
Remove the mixture and press it together with your hands.
Roll out the dough on a well-floured surface to about 5mm thick.
Cut out cookies with a cookie cutter and place them on lined baking sheets.
Bake at 180°C for 10 minutes or until the edges are just beginning to brown.
Cool the cookies on wire racks before optionally decorating.
Tips
You can mix the ingredients by hand if you prefer instead of using a food processor.
Avoid waiting for a smooth dough to prevent overmixing and tough texture.
For a rainbow effect, optionally pipe or dip in colored icing and add sprinkles to enhance appearance.
