Baked Eggplant and Zucchini Casserole

Ingredients

  • 1 Eggplant
  • 1 Zucchini
  • 5 large mushrooms
  • Salt
  • Pepper
  • Sumac
  • 2 tablespoons olive oil
  • 150 grams grated Halloumi
  • 5-6 halved cherry tomatoes

Preparation

  1. Cut the vegetables into slices

  2. Place them in a baking dish

  3. Sprinkle with salt, pepper, sumac, and olive oil

  4. Bake in a preheated oven at 200°C for 15 minutes

  5. Add grated halloumi and halved cherry tomatoes, then bake for another 15 minutes
