Baked Eggplant and Zucchini Casserole
Ingredients
- 1 Eggplant
- 1 Zucchini
- 5 large mushrooms
- Salt
- Pepper
- Sumac
- 2 tablespoons olive oil
- 150 grams grated Halloumi
- 5-6 halved cherry tomatoes
Preparation
Cut the vegetables into slices
Place them in a baking dish
Sprinkle with salt, pepper, sumac, and olive oil
Bake in a preheated oven at 200°C for 15 minutes
Add grated halloumi and halved cherry tomatoes, then bake for another 15 minutes
