Date-Filled Biscuit Squares

Ingredients

  • 3 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 cup butter or vegetable shortening, soft
  • 1/2 cup sugar
  • 3 tablespoons milk

Filling

  • 2 cups dates, pitted
  • 1 tablespoon corn oil or butter
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon ground anise
  • 1/2 teaspoon ground fennel

Preparation

Filling

  1. In a deep bowl, place the dates, corn oil or butter, cinnamon, ground anise, and ground fennel. Knead until smooth. Place between two sheets of butter paper and roll into a 9x13 inch rectangle. Set aside.

Instructions

  1. Heat the oven to 180°C and prepare a 9x13 inch pan.

  2. Sift the flour, baking powder, and salt on a piece of paper.

  3. In a mixer bowl, place the eggs and vanilla, use the whisk attachment and beat until doubled in volume and light in color.

  4. Add the butter and sugar and beat until creamy.

  5. Switch to the paddle attachment, add the flour and beat for 2-3 minutes until smooth dough, add milk if the dough is dry.

  6. Put two-thirds of the dough in the pan, press to spread it, add the filling, then crumble the remaining dough on top to cover completely.

  7. Bake for 20-25 minutes until set and golden brown, allow to cool completely in the pan, then cut into squares as desired.
