Biscuits with Date Filling

Ingredients

Dough

  • 3 cups flour
  • 1 teaspoon baking soda
  • a pinch of salt
  • 1 teaspoon ground cardamom
  • 1 cup light brown sugar
  • 1/4 cup fine granulated sugar
  • 1 cup softened butter
  • 2 large eggs
  • 1 teaspoon vanilla extract

Filling

  • 2 cups chopped dates
  • 2 tablespoons butter
  • 1 teaspoon cardamom
  • 1/4 cup sugar
  • 1/2 cup water
  • 1 cup ground walnuts

Preparation

  1. Sift the flour, baking soda, salt, and cardamom.

  2. In a mixer bowl, place the brown sugar, fine granulated sugar, and butter; beat with a whisk until creamy.

  3. Add one egg and beat, then add the second egg and vanilla; beat to combine.

  4. Attach the paddle attachment, add the flour mixture, and mix until a dough forms.

  5. Refrigerate the dough for one hour.

  6. Roll out the dough to a 1/2 cm thickness and cut out 2-inch circles using a round cutter.

  7. Place the filling on one dough circle and cover with another circle.

  8. Decorate the edges with a fork or a dough decorating tool.

  9. Place the cookies on baking sheets and bake for 15 minutes until golden.

  10. For the filling: In a pot, combine the chopped dates, butter, cardamom, sugar, and water; cook over low heat until thickened, then let it cool and stir in the ground walnuts.
