Biscuits with Date Filling
Ingredients
Dough
- 3 cups flour
- 1 teaspoon baking soda
- a pinch of salt
- 1 teaspoon ground cardamom
- 1 cup light brown sugar
- 1/4 cup fine granulated sugar
- 1 cup softened butter
- 2 large eggs
- 1 teaspoon vanilla extract
Filling
- 2 cups chopped dates
- 2 tablespoons butter
- 1 teaspoon cardamom
- 1/4 cup sugar
- 1/2 cup water
- 1 cup ground walnuts
Preparation
Sift the flour, baking soda, salt, and cardamom.
In a mixer bowl, place the brown sugar, fine granulated sugar, and butter; beat with a whisk until creamy.
Add one egg and beat, then add the second egg and vanilla; beat to combine.
Attach the paddle attachment, add the flour mixture, and mix until a dough forms.
Refrigerate the dough for one hour.
Roll out the dough to a 1/2 cm thickness and cut out 2-inch circles using a round cutter.
Place the filling on one dough circle and cover with another circle.
Decorate the edges with a fork or a dough decorating tool.
Place the cookies on baking sheets and bake for 15 minutes until golden.
For the filling: In a pot, combine the chopped dates, butter, cardamom, sugar, and water; cook over low heat until thickened, then let it cool and stir in the ground walnuts.
