Baked Chocolate Almond Biscuits
Ingredients
- 1 cup whole almonds
- 2 cups flour
- 1 and 1/3 cups unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 3 large eggs
- 1 cup fine grain sugar
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
Glaze
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons fine grain sugar
Preparation
Position the rack in the middle of the oven and preheat the oven to 180°C.
Prepare shallow baking sheets by lining them with parchment paper.
In a nut grinder, grind the almonds on medium speed until chopped.
In a mixer bowl, combine eggs, sugar, and vanilla. Using the whisk attachment, mix on medium speed for 5 to 6 minutes until the volume doubles and the color becomes light yellow.
Switch to the paddle attachment. Add flour, unsweetened cocoa powder, baking soda, salt, and cinnamon. Mix on low speed until combined, then on medium speed until a dough forms. Add the ground almonds and chocolate chips, and mix on medium speed for a few seconds until just combined, without overmixing.
Take half of the dough and shape it into a 12-inch log. Place it on the prepared baking sheet and press it with the palm of your hand to flatten into a rectangle. Repeat with the remaining dough on another baking sheet.
For the glaze: In a small bowl, whisk together the egg and vanilla until well combined. Brush the glaze over the dough and sprinkle with sugar.
Bake for 15 to 20 minutes.
Remove from the oven and place the baking sheets on a wire rack to cool for a few minutes.
Transfer the biscuits to a cutting board and, using a serrated knife, cut into approximately 1-inch slices.
Place the slices on a serving dish and let them cool completely before serving.
