Arabic-Style Coconut Syrup Cake

Ingredients

  • 1 cup flour
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 cup sugar
  • 1/2 cup shortening
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups fine coconut
  • 1 cup yogurt
  • 2 cups hot syrup or hot water

Preparation

  1. Preheat the oven to 180°C. Prepare a baking dish or medium-sized square pan and grease it with shortening.

  2. In a mixer bowl, place the sugar and shortening, attach the mixing beater, and run the mixer until the ingredients are combined.

  3. Add the eggs gradually and beat until incorporated. Add the yogurt, coconut, flour, salt, baking powder, baking soda, and vanilla.

  4. Spread the mixture in the dish and level the surface. Place the dish in the oven for 25-30 minutes until done.

  5. Remove the dish from the oven and pour the hot syrup immediately, let it absorb. Sprinkle with coconut, let it cool completely, then cut and serve.
