Roasted Fingerling Potatoes and Cauliflower

Ingredients

Fingerling potatoes

  • 1 pound fingerling potatoes, sliced in half
  • 2 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • cracked pepper to taste
  • 1 tablespoon chopped fresh rosemary

Cauliflower

  • 1 medium head cauliflower, broken into florets
  • 2 tablespoons olive oil
  • 1-2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • cracked pepper to taste
  • 1/2 teaspoon chili flakes

Preparation

  1. Preheat oven to 400 degrees.

  2. Toss potatoes with oil, rosemary, salt, and pepper, then place cut side down on a parchment-lined baking sheet.

  3. Toss cauliflower with oil, cumin, salt, pepper, and chili flakes in a big bowl, then spread on a parchment-lined baking sheet.

  4. Roast both sheet pans for about 40 minutes, turning halfway through for even baking.
