Roasted Fingerling Potatoes and Cauliflower
Ingredients
Fingerling potatoes
- 1 pound fingerling potatoes, sliced in half
- 2 tablespoons olive oil
- 1/2 teaspoon sea salt
- cracked pepper to taste
- 1 tablespoon chopped fresh rosemary
Cauliflower
- 1 medium head cauliflower, broken into florets
- 2 tablespoons olive oil
- 1-2 teaspoons ground cumin
- 1/2 teaspoon salt
- cracked pepper to taste
- 1/2 teaspoon chili flakes
Preparation
Preheat oven to 400 degrees.
Toss potatoes with oil, rosemary, salt, and pepper, then place cut side down on a parchment-lined baking sheet.
Toss cauliflower with oil, cumin, salt, pepper, and chili flakes in a big bowl, then spread on a parchment-lined baking sheet.
Roast both sheet pans for about 40 minutes, turning halfway through for even baking.
